Poha (flattened rice breakfast dish)
Ingredients:
-2-3 tbsp sunflower oil (or olive oil)
-1-2 tsp mustard seed
-1-2 tsp jeera (cumin seed)
-1 tsp turmeric
-1 red onion, chopped
-1/2 cup peanuts
-2 cups poha rice (flattened, dry, white rice), rinsed and drained or 4 cups puffed rice (soak in water for 2 minutes and drain)
-1-2 green chilis
-Cilantro for garnish (chopped small)
-Lemon
Instructions:
1. Heat sunflower oil until hot and then add mustard seed and jeera. Cook until it starts to pop then add turmeric and stir.
2. Add onion, green chili, and peanuts and saute for 3-4 minutes
3. Add rinsed poha and stir until combined.
Garnish with cilantro and lemon juice and enjoy! This is great with a boiled or fried egg.
