Aloo Patta Gobhi (potato and cabbage)
This is a very simple, classic, and healthy veg Indian dish made by cooking potatoes and cabbage in spices. My housekeeper, Aruna, taught me this because I wanted something quick to cook for myself. Many veg dishes are quick and easy to make, especially if you have a pressure cooker. No pressure cooker required though for this recipe.
Ingredients:
- 1-2 tbsp extra virgin olive oil
- 4-6 small potatoes (thinly sliced, cut potato in 4 and thinly slice those
segments)
- 1 large yellow onion (thinkly sliced)
- 1 green chili cut into segments (or red pepper flakes) - quantity depends on how spicy you like it. I used a tsp of red pepper flakes.
- 1 tsp cumin seeds (jeera)
- 1/2 tsp turmeric
- 1 small green cabbage (very thinly sliced, as for slaw)
- Salt to taste
Heat oil in a wok or skillet until hot. Add cumin seeds, turmeric, onion, chili, and cabbage and cook for 2-3 minutes until golden. Add cabbage and cook for an additional 2-5 minutes with lid on pan (depending on how crunchy you like your cabbage). Salt to taste. Serve with chapati! You could also add carrots or other veggies to this if you want to make it a more robust meal.

Palak (Basic spinach dish)
Ingredients:
- 2-3 tbsp extra virgin olive oil
- 4 cloves garlic (crushed w/ rolling pin)
- 1 onion (chopped)
- 1 tomato (chopped)
- 1 green chili (or 1 tsp red chili flakes)
- 1 bunch spinach leaves (remove stems, roll together, and slice into thin strips)
Heat oil in a wok or skillet. Once hot, throw in garlic and chili and cook for 30 sec. Add onion and stir - cook for 1-2 minutes. Add tomato, cook 1 more minute. Add spinach, cook for 2-5 minutes.
