Vegetable Korma
Ingredients:
-2 carrots, peeled and chopped into cubes
-Green beans (handful), cut off ends and chop into small pieces
-½ cauliflower, chopped small
-1 cup peas (frozen is fine)
-ginger garlic paste (~6 cloves garlic and an inch of grated ginger smashed together)
-1-2 potatoes, peeled and cut into chunks
-2 tomatoes
-1.5 cups paneer (softened)
-1 red onion
-1 tsp turmeric
-2 tsp coriander powder
-2 tsp chili powder or green chilies
-2 tsp garam masala
Instructions:
1. Boil carrot, green beans, cauliflower, and peas (add in order as cauliflower needs less time to cook).
2. Drain vegetables and set aside; use the water to cook potato and blanch 2 tomatoes (cover and set aside for about 5-8 minutes)
3. Keep the water but remove and peel the tomatos and remove the potato. Smash tomatoes and set aside. Set aside potato.
4. Use water to soften paneer (or just use cottage cheese -~ 1.5 cups)
5. Heat 4-5 tsp of sunflower oil, heat, and add onion and saute for 2 min
6. Add ginger garlic paste and saute 1 min
7. Add tomatoes and turmeric, coriander powder, chili powder or green chilies, and garam masala and saute 1 min
8. Add veggies, cook 2 min
9. Add 1 cup milk or cream
10. Add potato and paneer and stir. Cook for 3-5 minutes.
Serve with chapati or rice!
